3 Cups Rhubarb
2 TBSP. Cornstarch
1 & 1/2 Cups Sugar
1 Egg Slightly Beaten
1 Crust Lined Pie Plate

Pre-heat oven to 425 degrees
Cut rhubarb into 1/4 inch pieces
Sprinkle with cornstarch
Add egg and sugar
Mix well
Place in lined pie plate*
Bake for 30 minutes at 425 degrees
Reduce to 325 degrees
Bake for 30 minutes or until set
Let cool
Top with whipped cream
*Do Not Use a Deep Dish Pan
When using a frozen pie crust, let pie crust thaw first
